Properties and uses:
The Hornbeam is an excellent truffle plant, intermediate between the Hazel tree and the pubescent truffle Oak tree. It needs a very high chalky soil (PH superior to 7.5). It suits dry areas, where rain is rare. A good rooting of your plants is vital for the development of truffles so a thorough work of the soil is essential before planting. See Planting truffle trees.
The planting density for tuber uncinatum varies between 800 and 1200 plants per hectare.
Regular maintenance and careful watering are equally important if you want to succeed.

The Truffle Hornbeam can enter early into production, sometimes as early as in its third year! It has an intermediary performance between the Hazel tree and the pubescent Oak which is very interesting to diversify the growing of the plot.
Throughout the world there are several different types of truffle, however in France only 2 are regularly planted: Tuber melanosporum and Tuber uncinatum. See The different types of Truffles.
Uncinatum tuber / Bourgogne Truffle: The Burgundy Truffle is liked for its deep, incomparable undergrowth's fragrance. It is also appreciated for its hazelnut taste which makes its quality and its reputation. The Burgundy's truffle is harvested as early as September.
Melanosporum tuber / Perigord Truffle: The famous black truffle of Périgord is loved for its very strong unique flavour. It has a worldwide reputation. It is harvested from December to the end of March.
Which one to plant, Melanosporum tuber or Uncinatum tuber ?
Apart from the different flavour of each variety, generally plants with the uncinatum tuber are planted in regions where the winters can be severe. As the Bourgogne truffle reaches maturity earlier than son homologue, it can be harvested before hard frosts.
